After almost 100 years and just as many anecdotes, the Roannay restaurant is getting a second lease of life.For this major renovation, the studio has designed a masculine interior, with raw materials, dark tones and a hushed atmosphere.
With double Michelin-starred chef David Martin and young chef Mathieu Vande Velde at the helm, we wanted to create an open setting that would allow customers to admire from the dining room the silent, meticulous ballet being played out in the restaurant’s completely open kitchen. The restaurant’s lounge area is located in the former barn annexed to the service room. The huge bar with its arches, inspired by the design of the grilles on the Morgane Plus 8 GTR, blends in perfectly with the charm of the recently renovated roof structure.
